Pumpkin Flax Granola

This granola is made with healthy ingredients so you can feel good about eating it or serving it. It's packed with crunchy heart-healthy nut clusters, naturally sweetened with honey, maple syrup, and warm spices. This homemade granola is super easy to make, with only 5 minutes of prep and 45 minutes in the oven.

Flax seed is a great way to get in extra protein, fiber and omega-3 fatty acids. You can eat granola as a snack or serve it with Greek yogurt and fresh fruit.

Ingredients

Texture is so important when it comes to granola. Cooking slowly and at a consistent temperature.

Dry Ingredients
3 cups gluten-free rolled oats, (300 grams)
1 cup pumpkin seeds, (120 grams)
½ cup walnuts, chopped, (60 grams)
¼ cup flaxseed, (42 grams)
2 teaspoons cinnamon
1 teaspoon cardamom
½ teaspoon salt

 

Wet Ingredients
¼ cup coconut oil, melted, (60 ml)
¼ cup honey, (84 grams)
¼ cup pure maple syrup, (60 grams)
1 tablespoon vanilla extract
